Caramelized Allium Pak Choy

This is an easy and super flavorful dish to cook with your freshly harvested Pak Choy. I love the Carmelized alliums, which for me sing fall flavors. The use of soy sauce and sesame oil bring out the umami in the dish.
Ingredients:
- Vegetable oil

- 2 tablespoon Soy sauce

- 2 cloves Garlic cloves, chopped

- 1 Shallot, chopped

- 1/2 Leek, chopped

- 1 pound Pak Choy, quartered

- Sesame Oil,  to taste for garnish

- Chili Flake, to taste for garnish

Directions:

Heat vegetable oil in a large skillet over medium high heat. Add leeks, shallots, and garlic. Cook and stir until fragrant and slightly browned. Add soy sauce and a dash of water. Cover the skillet immediately to catch the steam from the water. Cook for 1 minute. Take the cover off and toss and stir until the Pak choy is tender.

Place in a wide bowl and garnish with a pinch of sesame oil and chili flake.
